Lila and Eric Bourgeois would like to welcome you to the Watering Hole at Brookhaven. This is our first year joining the team at Brookhaven. Our goal is to exceed your expectations on every visit to the club this year. We currently own and operate Corners Pizza and Stuff in Porters Corners. We have both worked at golf clubs and hope that we can provide you with the services that you require to have a great day at the club. We plan on being open from 7am till 9pm when the club is operating.
bar and banquet operations. We are currently booking parties for the 2010 season. We will be able to provide a great value and high level of service. The menu for dinners will vary from day to day and we anticipate doing various menus for our golf leagues. We even plan the menus out the week before so our guests can plan their dining arrangements before the actual day and offer different choices weekly, of course the regular light fare menu will always be available.
Restaurant at Saratoga Lake. She started in the dish room and quickly began to gain other responsibilities from Prep Cook to Pantry Cook. She participated in the Boces program and was invited to go to national competitions with the help of her mentor Chef George Hoffis. She continued to work at Panzas throughout her high school education. She attended the Culinary Institute of America and did her extirn at The Equinox Hotel in Manchester Vermont. She also worked at McGregor Country Club with Tony Panza for two summers, she was able to learn the entire country club experience while she was there doing everything from the beer cart to chef for elaborate weddings and fund raisers. When golf course closed, for the season, she was offered the position of Head Line Chef at Panzas by Michael Panza, she accepted but realized that she needed to work with different chefs to grow. Lila began to broaden her skills by working in several different kitchens with a diverse set of goals and menus. Lila also had been working in the dining room when the need arouse. During the late nineties she focused on the Dining Room completely. She worked at the Queensbury Hotel, Troy Country Club and Longfellows. While at Longfellows she was offered the Events Coordinator position and began her front of the house managerial experience. While at Longfellows she ran multiple locations often being responsible for up to five events at one time. She also managed parties of up to 600 guests in their catering department. After taking a couple of years off while caring for her second child she bregan to waitress at The Saratoga Polo Club. It didn't take long and she was the in charge of the Dining Room Staff at the Polo Club as well as the sister restaurant The Springwater Bistro. Lila was honored to be chosen the guest manager of the National Polo Hall of Fame Induction in Palm Beach Florida. The past two years she has been the owner/operator of Corners Pizza and Stuff.

While attending college, he worked in the front of the house to pay the bills. He attended Fulton County Community College and Marist in Poughkeepsie. He was going to college for accounting and working at Panzas as bartender after school and on breaks. When an opportunity as the bookeeper at Panzas became available he took it. Working days doing the paper work and night on the bar and doing the inventories only lasted a short time. He was offered to be closing manager of the restaurant as well. This enabled him to be mentored by Michael Panza in the art of service. He worked their until Michael sold the business to his brother in the early nineties. Seeing that the fine dining industry was either feast or famine he decided to go corporate. He worked for Pizza Hut as Assistant Manager or General Manager for ten years. During this time he won several awards such as top 4% nationally in the training and food standards in a test of knowledge to General Managers, Franchise Owners and District Managers. He also won Manager of the Year for Gates Enterprises during his first year as a General Manager. He was chosen to be the training Manager for his district and taught classes to all Assistant Managers that were picked as potential General Managers. While teaching this course he was overheard instructing the class by Steve Sullivan owner/operator of Longfellow's and the Old Bryan Inne. When Steve Sullivan was named to the Board of Directors as a consultant to Sargo's Restaurant at Saratoga National Golf he recommended Eric. Eric worked for two years at Sargo's and during that time the restaurant was nationally recognized by the Wine Spectator and earned The Four Diamond AAA rating. He oversaw a staff of over 75 that would have up to six different functions on any given day. Again realizing that the fine dining business was feast or famine he decided to again go corporate. He was the General Manager of the Saratoga and Latham Ruby Tuesday restaurant and was on team recogniized as the top district in the entire Northeast. The past two years he has worked as owner/operator with his wife and partner at Corners Pizza and Stuff.
